A committed farm to table restaurant, the Mayan Café sources its meat exclusively from local farms and uses as much sustainably-grown local produce and cheese as is seasonally available.
Some of the farms we use are :
1. Foxhollow Farm: (grass-fed beef & produce)
2. Fiedler Family Farm : (grass-fed pork)
3. Schacht Farm : (free-range turkey)
4. Smith-Berry Farm : (lamb)
5. Duncan Farm : (free-range eggs & grass-fed rabbit)
6. Field Day Family Farm : (produce)
7. Capriole Farmstead Goat Cheese : (goat cheese)
8. Kenny’s Farmhouse Cheese : (hard cheeses)
9. Red Hot Roasters : (organic, small-batch coffee)
Chef Bruce is at the Bardstown Rd. Farmers Market almost every Saturday morning, hand-picking produce & meats for the restaurant. If you’re lucky, you’ll catch him there!!
SUSTAINABLE EVENTS
Mayan Market Mondays : Every Monday evening from June – September, the Mayan Café features a different local farmer by offering specials that showcase their freshest produce & meats. The summer of 2009 was our first time with these specials, and it was a great success for farmers and diners alike!

SUSTAINABLE PRODUCTS
We use exclusively biodegradable, compostable take-out containers, paper towels, toilet paper & cleaning supplies. We were the first restaurant in Louisville to use the entire line of Ecosteward’s green supplies. We recycle all the cardboard, glass, plastic & aluminum used in the restaurant.
Our used cooking oil is donated to Good Oil Boys who upgrade diesel engines vehicles to run on recycled vegetable oil.
