
Born in a small village in the Yucatan Peninsula in Mexico, Bruce Ucán's culinary career has taken him from tropical resorts in Cancun to local Louisville favorites such as Timothy's and Captain's Quarters. Longtime fans of Bruce's will remember the bright blue Gypsy Van out of which he sold tacos & salbutes to construction sites. Upon seeing the positive response of these hungry patrons, Bruce decided to park his van and open his own restaurant, The Mayan Gypsy.
Bruce could see potential on East Market Street, an area that, up to that point, was fairly underdeveloped. In 1997, he opened his restaurant at 813 E. Market, later moving down the street to 624 E. Market. Throughout the next 10 years, Bruce built a loyal customer base that flocked to his small, brightly decorated establishment, in search of his famous roasted lima beans and savory salbutes. When Bruce closed the doors in July of 2006, his customers took with them large containers of his creamy seafood bisque along with the hope of his return. They were not disappointed.
In January of 2007, Bruce reopened as the Mayan Cafe, back at 813 E Market, as a slightly smaller, simple, yet elegant version of the Gypsy. Here, he delights guests with creative dinner specials and seasonal desserts & wines. Bruce prides himself in the consistent quality of his food, purchasing as much local coffee (Jackson's Organic Coffee), produce, fish & meat as possible. All of the take away, paper & cleaning products used in the restaurant are ecofriendly and biodegradable (Ecosteward).
